As some of you may or may not already know, we’re departing for a mission trip in France on Wednesday morning. We’ll be helping with a kids camp where we’ll be teaching English through Bible Stories; we’re really excited!

Spicy Cornbread Chicken Pot Pie Recipe

I tried this one out a few nights ago, and I’m actually looking forward to eating the leftovers this time!

The recipe is from a Campbell’s cookbook, but I changed it up just a little by adding some rotel. I try to find recipes with ingredients I normally keep around the house anyway - and I happened to have all these. If you try it out let me know!

Spicy Cornbread Chicken Pot Pie

SPICY CORNBREAD CHICKEN POT PIE
1 can cream of chicken soup
1 can whole kernel corn (about 8 oz), drained
2 cups cubed cooked chicken or turkey
1 pkg (8 1/2 oz) corn bread/muffin mix
3/4 cup milk
1 egg
1/2 cup shredded Cheddar cheese (2 oz)
1/2 can rotel

1. Preheat oven to 400. In a 9-inch pie plate (I used a deeper dish) mix soup, corn, rotel and chicken.

2. Mix muffin mix, milk and egg. Pour over chicken mixture. Bake for 30 min or until golden. I believe it was about 25 minutes for me.

3. Sprinkle with cheese.

I was cleaning our sewing/work-out/2nd guest room the other day and saw my sewing machine sitting on the table collecting dust bunnies. Then it came to me. I’ll sew a little bunneh. I’m actually surprised it didn’t come out looking all mangled and scary looking since I didn’t use a pattern. I’m the type of person who will cut corners at any cost. I already had the tan linen fabric (JoAnn’s sale bin…think I got a yard for $2) and used some bits of sample fabric my Nana gave me. The only thing I haven’t finished on it is finding something for the tail…any ideas?

There’s something insanely depressing about a quiet house after you’ve had a 2 year old living with you for the last several days. My family stayed with us over the weekend and we had so much fun. We visited the zoo, talked a lot, ate some food, and paused to listen for “cop copters” (helicopters in the land of Nathan). I’ve always been the type of person who gets droopy on Sunday evenings knowing my weekend is over. I can’t even enjoy the last day of a vacation because I’m dreading the end of it. I suppose that’s why I’m in a funk today. Thanks Mom, Dad, Jen, Dave and Nathan for visiting - I already miss you!

We’ve Got the Fever…

And no, not baby fever. But you aren’t the first to ask. We had a great day outside yesterday. I worked until 11 or so and Eric and I started in on the garage. It was a pretty big task, but we were finished by 3. And now we have everything organized, PLUS we can fit both cars in the garage! How lame is it that it’s been a year and we’ve just now gotten to it?! By the way - if you’re planning on cleaning your garage and you have boxes and junk to move, WEAR GLOVES. Eric found a black widow - granted it was dead, but still quite creepy to think it was living in our garage.

After we finished with the garage we went to Long Hollow Nursery and picked out some flowers to plant around the house. I was so excited my May Night flowers weren’t dead - they came back from last year after I chopped them off thinking they were hopeless. The rest of the flowers below are ones we planted. I like to think of this as the first round of spring. The next will be our roses, day lillies, crape myrtles and irises.

It took me 14 years to realize
how much I loved my sister.

We packed her up for college,
I never thought I’d miss her.

The long ride home took me back
to memories before that night,

like when we sang at church with mom
she’d make us dress alike.

We dressed the dog in doll clothes
and braided each others hair.

We put our boogers on the wall
and took trips to the “Snot Fair.”

We had our fights that left their scars,
and for that I ask forgiveness.

I can’t thank God enough for you,
not many are this blessed.

Just always know that whatever
happens from this day on,

There’s a Jen shaped-piece of my
heart where you belong.
